The Power of Vegetables

The Power of Vegetables teaches parents essential knowledge and practical tools to instill healthy eating habits. Our families are embarking on a transformative journey towards healthier living in a 7-week nutrition certification class. Classes started in early March. Parents will receive a certification from the University of Illinois (UIC) along with a gift at the end of the workshop series that will help them on their healthy eating journey. 

In the neighborhoods where our families reside, diabetes diagnoses rates among African American and Latinx populations are notably higher at 11.4% and 12.0%, respectively, compared to the city-wide average of 9.0%. These statistics underscore the urgency of our tailored program which addresses diabetes management and the broader social determinants of health within our community. In response, the program offers a deep dive into nutrition, where families can explore topics such as the health benefits of incorporating vegetables into their daily meals.

  • Understanding Essentials: Families learn about essential food groups and effective portion control techniques. 
  • Empowering Diabetes Education: Families gain insights into managing and preventing diabetes through dietary choices. 

Our program tackles the stigma linked to type 2 diabetes, fosters understanding, and empowers individuals to manage their health and the health of their families. We aim to create a supportive community where individuals feel valued and equipped to lead healthier lives.
